Frozen Green Juice Popsicles

Ok, it’s getting to the dog days of summer and we all need more ways to cool down. And if green juice Popsicles don’t fit the bill, I don’t know what would.

All you need to get into homemade popsicles is an inexpensive set of Popsicle molds with sticks. You can even use ice cube trays with straws or craft sticks if you prefer to have more DIY treats. That’s up to you.

Now for the instructions, you basically just blend or juice up the ingredients in the recipe and pour the mixture into your molds. Add the sticks and pop into the freezer. It can take up to 4 hours to fully freeze, or even just leave them in overnight.

Smooth and Sweet Green Popsicles

Here is a great basic green juice Popsicle recipe you can start off with, containing a healthy blend of greens and fruit.

  • 1 cup kale leaves
  • 1 cup spinach leaves
  • 1 shot wheatgrass juice
  • 1 tart apple
  • 2 cups pineapple chunks
  • 1/2 lemon, without the rind

Chop where needed and juice everything up. Blend together and add to your molds for freezing. You should get around 6 pops from this mix.

The Frozen Green Dragon

This is a recipe that just uses a blender, making for a thicker kind of popsicle with lots of pulp. You could probably do this one as juice-only, but you’ll get less liquid for fewer popsicles.

  • 1 cup water
  • 1 cup pineapple chunks
  • 2 stalks of celery
  • 1 shot wheatgrass juice
  • 1 cup kale leaves
  • 1/2 cup spinach or Chard leaves
  • 1 apple
  • 1 medium size cucumber
  • 1 inch chunk of ginger, peeled
  • 2 tbs honey

Blend until smooth and freeze. This is a larger batch and should make closer to a dozen Popsicles

Green Lemonade Pops

This is a very light and refreshing take on a green popsicle with just a few hints of lemon and cucumber along with the fresh wheatgrass.

  • 1 medium size cucumber
  • 1 lemon, without the rind
  • 1 shot wheatgrass juice
  • 2 cups water
  • 1 tbs honey or maple syrup

Seeing as this blend doesn’t have much pulp in it, you can really use either the blender or a juicer to the same results. So blend/ juice and freeze. Enjoy on those extra hot days. Expect around 6 Popsicles.
